Mingo, I just got it.

1, Nightmare Moon (NMM from now on) escapes from the moon.
2, NMM is defeated, gone.
3, Luna is back, but younger/smaller.
3, Season 1 finishes.
4, Past Sins happens.
5, At the end of Past Sins, instead of giving filly Nxy back to Twi and destroying NMM Luna destroys Nyx completely and erases her from existence. (Nopony has any memory of her.)
6, Luna is now grown up for the Nightmare Night episode.

Crazy? Or a perfectly good explanation for why Luna doesn't look the same one year after getting back from the moon. You decide.
