Is there any way to play the Xbox 360 with both the RGB cables and the RCA cables at the same time? (Theres a switch on the end that says 'HDTV' and 'TV') I want to play the RGB on my TV and the RCA on my capture card. And yes, I know there won't ba any audio from the TV. (Red and White carry audio)

not sure, only way i can think of is actually taking the cord and cutting it up, split the cables, and rewiring it completely, but im not sure about the hd/tv part...
But i wouldn't do that to your cables, so try googling it! You may find some weird splitter that goes between the cable and the box to give you 2 cords, but that involves getting another cord..

Or maybe i misunderstood your question...

yeah, your best bet is a splitter. But the only practical use would be for recording. I dont know many people who want to watch one thing on two tv's
