Also, the rat thing. How would tell the lady all the rats are gone without her just looking and your word? It would need to be a trigger that when all rats in the room are destroyed then the quest is over and you get your reward.

No it wouldn't. Killing things and returning a skull can only be entertaining for so long. What if you need to take something somewhere? Like take the owner's dog to the woods and let him free, when you return to the owner what would you return to him other then your word? Bad example, but I hope you get the point.
