Yes, it's open for Canadians, and yes you can do a campaign remake. Just tell me exactly what so I can include it in the list.

Just wondering how much of the map is judged on accuracy. Like if I was to change the map alot, like delete a whole level of prisoner would i be judged harshly?
No, it's not judged based on accuracy. You are encouraged to be creative with the map, so long as the other factors you will be judged on aren't affected by it.
Can their be an overall winner for accuracy? Because in my remake, I intend on being as accurate as possible, trying to make as few changes as possible (one obviously having to be ladders >.<)
what gametypes should be supported on the map. I know at least CTF, King of the Hill, and Oddball(slayer too obviously). Any others that I should add?
Hi, is it also open to the British?! and would it be worth entering my Pillar of Autumn map? Its not really a campaign remake as such more I suppose you could say inspired by the campaign, there are definatley elements of the campaign in there!? if its not I might make a map based on part of the second level would this be ok? Just thought I'd ask
Try to support all gametypes (except Race, obviously). It will just make the map much more fun to play.

I think if you make the map perfectly, then it will get a pretty good score, if not perfect, because this is a remake contest. Welcome to forge hub, I can see you want to do 2 maps, but as it clearly says in the original post: So, you have to choose one.
