Is it possible to make a bridge that would fall apart? I tried placing a bridge on normal physics and explosives on fixed, after the barrels exploded the bridge floated in the air.

I also tried making structures re spawn over time, but they never reappeared in there original place?

If I found a way to make structures re spawn i might have a way to make bridges settle in a fixed place.

The closest thing I can think of is to play an Invasion gametype and set all the pieces of the bridge as Invasion Gates. They'd disappear when a bomb was planted on them.

You could potentially build it so once the bomb detonates, only a small chunk of the bridge disappears, so it looks more like the bomb just took out part of the bridge.

Set all the blocks to "INV_GATE" and make sure they are in the same spawn sequence as the bomb and plate.

Would it work to set a bunch of the bridge pieces as a second phase, or whichever the next phase is. Then plant the bomb and when the old bridge disappears the new ones spawn and fall.

No, unless you use "Scenery" pieces, it's not possible to have them fall. I wish that Bungie would've made a way to do it (with a fourth physics property) but "Structure" pieces will always stay fixed once they stop moving. In the case of your map, they will spawn in mid-air, but they will already be fixed where you put them.
