How do I make shield doors go sideways?

Overload the map, the easiest way is to keep placing trip mines.

 

I think he means like lay them lat. Parallel with the ground.

Use the right trigger and toggle sticks to move it into position then without letting go, save changes and quit. Then re-start your forge and it should be where you were holding it.

Same trick for floating objects.
